Note to New Viewers

I love Live Journal, it is for the most part my largest contact point with the rest of the world. I spend a great deal of time looking for the journals of those who I feel have something to say that I want to hear. If I have friended you it is because something you said moved me in some way.

You are more then welcome to friend me back should you be so moved - but it is not an expectation. I want to get to know you, I can do that as easily through interacting in your home as you could by adding me. So as I said, I don't have expectations of being added (though I would be happy to have you), but I do hope that you will give me a chance to get to you know you through your journal.

1: Who hurt you the most in your life?

Either my father who built most of my self esteem issues with his bare hands and tried to instill in me a belief that if I wasn't perfect I didn't deserve to live.

or

My GF of six years who three days after we broke up informed me that we'd never had an actual relationship anyway, because we were both girls so of course it didn't count.


2: What TV show/movie would you have wiped from the face of history?

Reality TV meant to glorify bad behavior because it has an actual affect on our culture.
Anything else I can just change the channel and I don't feel the need to take away something someone else might like. That said, I would love to see Dr Who continue but with the back end of Moffat.

3: How angry can you get?

How does one measure something like that?
Let's leave it at I lost my shit when I'm angry and I've been told it's a terrifying thing to see, especially if it's aimed at you. I try not to lose my temper, because when I lose my temper I lose myself.

4: What would you choose as your last meal, why?

Lobster/Crab Bake - because it's my favorite food, preferably with a bit of puffer fish because that's something I've always wanted to try - and right before you're going to die anyway seems like a good time to do it.

5: Would you want to know the date of your own death & why?

I'm torn on the one hand I wouldn't want to dwell on it and waste the time I had left, on the other hand I would like the time to put my affairs in order and make sure I had done the things I need to do... so final answer? No, but I really need to get my shit together get on to my bucket list and make sure my wife knows how much I love her.

2 2/3 cup sugar
2/3 cup light corn syrup
1/2 cup water
2 egg whites
1 tsp vanilla
2/3 cup pecans

Cook Sugar, Corn Syrup, and water in pot until sugar dissolved (On a humid day use 1 tbs less water). Cook without stirring to 260

Beat Egg Whites in bowl until stiff peaks form continue to beat while pouring hot syrup in thin stream into egg whites. Add Vanilla; beat until mix holds its shape, fold in nuts.

Drop onto pan and let stand

Mint Chocolate Chip Cookies

1 cup butter
2 cups sugar
2 eggs
1 tbs Vanilla
3/4 cup Coacoa powder
2 cups flour
1 tsp Bkg Soda
1/2 tsp salt
1 Cup Andes Mints (Use the real mints and pulse them in the food processor to make the pieces bigger.)

Oven 350
Sprinkle Sugar on Top

Haystacks 2 ways

First Batch:
1/4 cup butterscotch
1/4 cup chocolate
1/4 cup peanut butter
1/4 cup peanuts
1 cup chow mein noodles

Second Batch
1/4 cup Cinnamon chips
1/4 cup chocolate
1/4 cup peanut butter
1/4 cup peanuts
1 cup chow mein noodles

Melt PB, chocolate & butterscotch or Cinnamon Chips
Mix in noodles & peanuts
Spoon into piles on a cookie sheet
Freeze for half an hour

If you choose not to do both double the amounts for the one you use.

Easy Fudge

2 cups sugar
1 teaspoon salt
6 tablespoons unsalted butter
1 cup heavy cream
3 1/2 cups mini marshmallows
3 cups semisweet or white chocolate chips
1 teaspoon pure vanilla extract
1/2 cup crushed peppermint candy
Directions

Line a 9-by-13-inch baking pan with two sheets of waxed or parchment paper in a crisscross manner (one lengthwise, one crosswise) so ends overhang sides of pan; coat evenly with cooking spray.
In a heavy-bottomed saucepan over medium heat, cook sugar, salt, butter, cream, and marshmallows, stirring, until butter and marshmallows are almost melted, 5 to 6 minutes.
Bring mixture to a boil; cook, stirring occasionally, 5 minutes. Remove from heat. Add chips and vanilla; stir until chips are melted. Pour mixture into lined pan.
Let fudge cool in the pan at room temperature, 3 hours. Use edges of paper to lift out fudge; place on cutting board, and remove paper. Cut out shapes with cookie cutters, or cut fudge into bars. Sprinkle evenly with crushed candy.

Chocolate Chip Meringues

2 Egg Whites
1/8 Cream Tarter
1/8 tsp salt
1/2 cup white sugar
1/2 cup mini chocolate chips

Oven: 225

Put egg whites in a bowl and let sit for an hour (Meringue whips faster when whites are room temp)
Add Cream of Tarter
Whip Eggs until they turn glossy & White - and they stop increasing in volume
Only when the Meringue is set up - add sugar and chocolate chips (a little of each at a time in batches)
Drop by spoonfull on baking sheet
Bake for 1 hr then turn off the oven - leave the candy in the oven until cool
